Ingredients

500 grams of Fresh shrimp

1 cup of Rice

1 Onion, finely chopped

1 Bell pepper, diced

6 Garlic cloves, finely chopped

6 Sweet chili peppers, finely chopped

1 Leek, finely sliced

Annatto oil

2 tablespoons of Capers

2 tablespoons of Tomato sauce

3 Lemons

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a pot, heat a little annatto oil and sauté the onion and garlic until transparent.

Step 2 : Then, add capers, bell pepper, chili peppers, and tomato sauce, followed by water, bringing it to a boil and seasoning with salt and pepper.

Step 3 : Add the rice and cook for a few minutes.

Step 4 : Add the shrimp and continue cooking until the rice grains are soft.

Step 5 : Finally, add lemon juice and chopped cilantro, adjust the seasoning as needed, and serve hot, accompanied by avocado and lemon slices.
