Crab Consommé

Crab consommé is a delicious soup made from a crab called jaiba, rich in nutrients and low in cholesterol. Its preparation includes cooking the crabs with garlic and bay leaf, then blending the meat with the garlic and cooking in fish broth. Sauté onion, tomato, and cardamom, add to the broth and season. Ingredients

4 Crabs

5 Garlic cloves

½ Onion

1 teaspoon of Salt

4 cups of Fish broth

1 Onion

2 Ripe tomatoes

½ cup of Cardamom

1 Parsley sprig

¼ teaspoon of Pepper

Preparation

Step 1 : Wash the crabs and cook them with salt, a bay leaf, and the 5 garlic cloves for 30 minutes, or until they turn red.

Step 2 : Remove them from the cooking water and separate the shell and legs; then cut the meat-containing parts into cubes.

Step 3 : Remove the garlic from the cooking water and mash it with the crab meat, regardless of whether there are shell remnants.

Step 4 : Cook the mashed garlic and meat in fish broth for about 10 minutes.

Step 5 : Next, add the filtered crab stock and mashed garlic to avoid residues.

Step 6 : In a skillet, sauté chopped onion and two grated tomatoes, add half a glass of cardamom, and let reduce for about 5 minutes.

Step 7 : Allow the sofrito to rest at room temperature, mash it, and strain it through a fine sieve to remove solids.

Step 8 : Then, add the strained sofrito to the crab broth, add pepper, and adjust the seasoning.

Step 9 : Serve hot and garnish with crab claws and parsley leaves.
