Chicken Boiled Soup
Ingredients
1 Creole chicken
2 Cut corn on the cob
250 grams of Celery or arracacha
300 grams of Pumpkin
300 grams of White taro
250 grams of Name (a root vegetable)
500 grams of Yucca
1 Carrot, peeled and cut into pieces
2 Onions, finely chopped
1 Bell pepper, diced
100 grams of Sweet chili, finely chopped
1 Garlic head
1 Spring onion stalk
1 Spanish celery stalk
2 Cilantro sprigs
2 Mint sprigs
Achiote oil
1 pinch of Salt
Preparation
Step 1 : To prepare this delicious dish, start by cutting the chicken into pieces and washing it carefully.
Step 2 : Reserve it.
Step 3 : Then, peel and cut the yucca, taro, celery, name, and pumpkin into pieces, and set them aside as well.
Step 4 : In a pot with enough water, bring to a boil and add the chicken, a chopped onion, spring onion, Spanish celery, and the corn cob.
Step 5 : Season with salt and cook until the chicken begins to soften.
Step 6 : Then, add the yucca, taro, celery, carrot, and name, and let cook for 5 minutes.
Step 7 : Add the pumpkin and cook until soft.
Step 8 : In a frying pan, heat a little achiote oil and sauté the onion, garlic, sweet chili, and bell pepper.
Step 9 : Season with salt and pepper, then add this sauté to the soup, along with cilantro and mint.
Step 10 : Remove from heat and serve hot.
Step 11 : Garnish with arepas, casabe, and avocado.
