Venezuelan Creole Polenta
Ingredients
3 cups of Pre-cooked cornmeal flour
600 grams of Ground pork meat
2 Finely chopped onions
2 Diced tomatoes
3 Crushed garlic cloves
4 Eggs
¼ cup of Capers
¼ cup of Raisins
¼ cup of Stuffed olives
½ cup of Sweet red wine
50 grams of Papelón (unrefined cane sugar)
2 cups of Milk or broth
Annatto oil
Salt, pepper, and sugar
Preparation
Step 1 : To prepare this delicious dish, start by heating a skillet over fire with annatto oil and sauté the onion and garlic until caramelized.
Step 2 : Next, add the meat and sauté well for a few minutes.
Step 3 : Then, add the tomato and stir everything thoroughly, seasoning with salt and pepper, and cook for 10 minutes.
Step 4 : Afterward, add the chopped papelón, raisins, capers, and olives sliced into rings, along with the wine.
Step 5 : Adjust the flavor and cook for 7 minutes over low heat, ensuring the stew is thick and not too runny.
Step 6 : Once ready, remove from heat and let it rest.
Step 7 : In a bowl, place the cornmeal flour, salt, a pinch of sugar, and some warm milk.
Step 8 : Mix to combine the ingredients and gradually add the eggs until obtaining a smooth and firm dough.
Step 9 : Add a bit of annatto oil to give color and shine to the dough, then let it rest for 5 minutes.
