Salt-cured Pork with Beans

Ingredients

1 kilogram of Salt-cured pork

500 grams of Beans

2 Onions, sliced into julienne strips

3 Tomatoes, diced

1 Bell pepper, sliced into julienne strips

1 Garlic head, peeled and crushed

2 Potatoes

250 grams of Pumpkin (auyama)

1 Ripe plantain

1 tablespoon of Baking soda

Achiote oil

Salt, pepper, cumin, and oregano

Preparation

Step 1 : The pork has been soaked in water for a few hours to desalt it.

Step 2 : The meat is removed and cut into pieces, then set aside.

Step 3 : The potatoes, pumpkin, and plantain have been peeled and sliced, also reserved.

Step 4 : The beans were cooked in plenty of water to soften them, adding baking soda during cooking.

Step 5 : After draining the beans, they are set aside.

Step 6 : A sofrito has been prepared with onion, garlic, tomatoes, and bell pepper, cooking until transparent.

Step 7 : Add the pork to the sofrito, stirring well and seasoning with salt, cumin, pepper, and oregano.

Step 8 : After a few minutes, add the potatoes, pumpkin, and plantain, cooking everything over medium heat for about 20 minutes.

Step 9 : Add the cooked beans, adjust the seasoning, and let it cook for another 10 minutes.

Step 10 : Serve the stew hot, accompanied by white rice and plantain slices.
